Home Made Buckwheat Granola

 

If you’re looking for a grain-free granola, fear no more! This granola is so good and will pair with anything. You can eat it straight out of the jar, eat it with cereal and just add almond milk, top it on top of your coconut yogurt or smoothie. The options are endless!

What’s up with Buckwheat?

Okay, so you’re probably thinking how is this grain free if buckwheats in it? Well, sorry not sorry to break it to you but buckwheat contains no wheat, nor is It a grain. Buckwheat is the fruit seed of a plant similar to rhubarb and sorrel and the perfect swap for people with wheat or gluten sensitivities.

Buckwheat has a high protein content, and contains all essential amino acids, making it a great staple if you’re vegan or vegetarian. It’s high in magnesium, a mineral with a muscle-relaxing effect.

I also found out eating magnesium-rich foods before your period can help reduce cramping, headaches and back pain!

Grain Free Buckwheat Granola

Ingredients:

1 Cup of Buckwheat Flakes (Oatmeal like texture)

1/2 Cup of Buckwheat

1 1/2 Cup of Coconut Flakes

1 Cup of Crushed Walnuts (you can use any nuts!)

1/4 Cup of Chia Seeds

1/2Tsp of Sea Salt

1/4 Cup of Coconut Sugar

1/3 Cup of Honey or Maple Syrup

1/3 Cup of Coconut Oil

1tsp of Vanilla Extract

1/2 Cup of Cacao Powder

Directions:

1. Preheat oven to 350°F / 175°C.
2. In a large bowl combine buckwheat flakes, buckwheat, coconut flakes, chia seeds and coconut sugar. Roughly chop nuts and add them to the mix.
3. In a small saucepan over low-medium heat, melt coconut oil. Add honey or maple syrup, vanilla, salt and cocoa powder. Whisk to combine until smooth.
2. Pour liquid ingredients over dry and mix together.
3. Spread the mixture out in an even layer on a lined baking sheet and press firmly with the back of a spatula so the mixture is compact. Bake for 15-20 minutes. Remove from oven, flip granola in large chunks, and place back in oven to bake for another 10 minutes, stirring every 3-4 minutes until toasted. The dark colour of the granola makes it hard to tell if it is cooked or not, so go by smell and taste! Enjoy!!
