Cheesy Cashew Sauce Pasta!


My favourite pasta used to be fettuccine alfredo with parmesan- could there BE anymore cheese? (*site Chandler from Friends). Unfortunately, not being able to handle dairy like I used to, my go-to is no longer super cheesy pastas... However, I've been playing around with cashew sauce for salads, pastas and dips and I think I finally hit the nail on this one for when I have that cheesy craving.

Here's what you need:

1 cup of Cashews

Water from soaked cashews

Coconut Milk

Nutritional Yeast

1 Clove of garlic


Onion Powder

Garlic Powder


"Meet Rub" from Spiceworld

OR Paprika, and Chile, will do the trick

GOGO Quinoa Pasta

-Soak cashews over night. 

-First blend them in a food processor without the water, and break them down as much as you can. 

-Slowly add in water to get it to a consistency you'd like. 

-Add in the garlic and blend until its all broken up. It helps to cut it up before throwing it in the processor. 

-Add nutritional yeast (roughly 1/3 to 1/4 cup)

-Taste! Check how the flavour is, maybe you want more garlic or nutritional yeast!

-Add in other seasonings 1 by 1 and base it off your taste buds!

-Franks hot sauce- This was a game changer!

- Add in 2-3 tablespoons of coconut milk to make it extra creamy

-Warm up on stove top and then its ready to go!

With a sauce like this- everyone's taste buds are different. Play around with the seasonings, add in a little to start and then make sure to taste as you go and you'll figure out what to do from there! Steam some greens like spinach and kale then it’s ready to eat!!
